QUARTET

This single malt whisky, matured in a combination of Chardonnay, Port, Apera and Muscat casks, presents a rich dark red gold hue that hints at its depth and layered character.  On the nose, it opens with sweet floral aromas accented by spice, red fruits, and soft notes of caramel and vanilla, creating an inviting and aromatic bouquet. The palate is dense and indulgent, bursting with flavours of Christmas cake, cloves, cinnamon, and dried fruits, offering a bold yet refined sweetness.  The influence of the diverse cask profile brings together a luxurious richness from the Port, a nutty elegance from the Apera, and a creamy softness from the Chardonnay. The finish is long, warming, and well-balanced, leaving a lingering impression of spiced fruit, caramel, and a subtle oak dryness. A harmonious and sophisticated dram that showcases both complexity and elegance.

Double distilled NZ distillers malt, aged at least 7 years, this is Patricks ultimate expression of his wine and whisky making craft

Crafting Waiheke's Whisky

Making whisky by the sea, our fresh water has a briny ocean influence. The combined with organic New Zealand Malted Barley, gives us our unique taste profile. If you like salinity and seaweed with sweet nuts and cigar smoke with a toffee or two, you are in the right place. Our Island is our biggest ally.

Step 01

Mashing

We start with a half ton mash of NZ malted barley and water from our aquifer

Step 02

Fermenting

We embark on a 72 hour ferment using NZ yeast in non-pressurised-washbacks

Step 03

Wash Distilation

3,000 litre batch wash distilation for approximately 8 hours with 25% ABV low wines in copper pot stills

Step 04

Spirit Distilation

Low wines and feints distilation with manual head cuts and tail cuts in copper pot stills
