Fairlight is a delicious golden world-first blend of premium unpeated world whisky, with the distiller's selection of Waiheke's peated back catalogue. Blended with the help of master distiller Alan Winchester.
A minimum of 5 year old whiskies in the blend, Fairlight is a synthesis of old world single malt and Virgin Oak grain both aged in American oak married with Waiheke Whisky's NZ peated single malt.

Fairlight Tasting Notes:
Delicate floral notes mingle with a gentle waft of peat smoke, reminiscent of a distant bonfire on a winter's evening. There are hints of heather honey and vanilla, followed by subtle spices like cinnamon and nutmeg.
The entry is smooth and slightly creamy, with a surprising depth of flavor. Sweet malt and caramelized sugar dance on the tongue, complemented by a touch of orchard fruits—ripe apples and pears. The peat influence emerges gently, adding layers of earthy smoke that intertwine seamlessly with notes of oak and a hint of coastal brininess.Medium-long and satisfying, with the hint of peat smoke lingering alongside a final flourish of dried fruit and a whisper of dark chocolate.
This whisky offers a delightful balance of the classic non-peated style enriched with the distinctive character of Waiheke's peated whisky. It's a harmonious blend that showcases both tradition and innovation, making for a memorable sipping experience.

The label is different from Waiheke’s single malts. It refers to the shape of the entrance to our distillery and the logo embossed on our bottle.
