SERIS 1 is named after the famous map of Al Idrisi and its place in the history of the word Sherry.

Made from lightly-peated New Zealand malt, double distilled in copper pot stills. First maturation in American oak wine barrels which have been shaved, toasted and re-charred (STR) giving a floral which leaps from the glass.

Finishing in PX Apera (Australian Sherry) casks helps to develop glazed orange peel, citrus, spiced apple and sandalwood notes.

The palate is rich and mouth-coating with notes of butterscotch, raisins, fruit cake, cereal and a touch of peat, complimented with a savoury spice finish.

Rich and mouth-coating, this whisky delivers flavours of butterscotch, raisins, fruit cake, and cereal, with a hint of peat. A savoury spice finish adds depth and balance to the experience.

Peated NZ malt, double distilled and aged in STR American oak wine barrels.

Crafted from peated New Zealand malt and double distilled in copper pot stills, this whisky underwent its first maturation in American oak wine barrels. The barrels were shaved, toasted, and re-charred (STR), imparting vibrant floral notes that leap from the glass.

Crafting Waiheke's Whisky

Making whisky by the sea, our fresh water has a briny ocean influence. The combined with organic New Zealand Malted Barley, gives us our unique taste profile. If you like salinity and seaweed with sweet nuts and cigar smoke with a toffee or two, you are in the right place. Our Island is our biggest ally.

Step 01

Mashing

We start with a half ton mash of NZ malted barley and water from our aquifer

Step 02

Fermenting

We embark on a 72 hour ferment using NZ yeast in non-pressurised-washbacks

Step 03

Wash Distilation

3,000 litre batch wash distilation for approximately 8 hours with 25% ABV low wines in copper pot stills

Step 04

Spirit Distilation

Low wines and feints distilation with manual head cuts and tail cuts in copper pot stills
