Bottled at 7 years old, this whisky showcases the talents of Waiheke Whisky's head distiller, Patrick Newton, who has been named New Zealand Winemaker of the Year on three occasions.

Predominantly aged in ex-Bourbon, this whisky has been finished for 2 years in an ex-Mudbrick French Oak Chardonnay barrel. The barrel was a wet fill; meaning the Chardonnay wine is removed and the whisky is introduced almost immediately to prevent contamination.

Presented at 46%, the Chardonnay character on the nose of melting butter and oak blends with sherbet lemons and honey.

On the palate, more umami flavours with sweet miso, lemon and butter. A deliciously smooth, oily mouthfeel and a long finish of toasted hazelnuts, bready malt and our trademark salinity.

This is a truly interesting whisky, with real New Zealand character – non chill filtered, no added colour and it even has a screw cap! If you are interested in adding unique, complex whiskies to your collection, this is the perfect choice for you.

Crafting Waiheke's Whisky

Making whisky by the sea, our fresh water has a briny ocean influence. The combined with organic New Zealand Malted Barley, gives us our unique taste profile. If you like salinity and seaweed with sweet nuts and cigar smoke with a toffee or two, you are in the right place. Our Island is our biggest ally.

Step 01

Mashing

We start with a half ton mash of NZ malted barley and water from our aquifer

Step 02

Fermenting

We embark on a 72 hour ferment using NZ yeast in non-pressurised-washbacks

Step 03

Wash Distilation

3,000 litre batch wash distilation for approximately 8 hours with 25% ABV low wines in copper pot stills

Step 04

Spirit Distilation

Low wines and feints distilation with manual head cuts and tail cuts in copper pot stills
