This fascinating and delicious expression has been created especially for Dramfest 2023 by Patrick Newton our head distiller, and exemplifies our DYAD wine finish range.

Double distilled in copper pot stills in February 2018 from a half tonne mash of NZ peated malt, the liquid was first aged in American oak for 4 years.

Patrick also made the fortified wine that lent us the barrel, in a port style from Petit Verdot grapes grown 300 m from our Distillery.

This particular whisky was then finished for the past year in this Waiheke Island Vintage ‘Port wine’ Barrel.

Aroma: dark berry fruits, dried dates, orange peel, vanilla and peat smoke

Palate: rich and mouth filling with red fruits, caramel and smoke with a sweet subtle oak finish.

Rich and mouth-filling, this whisky offers vibrant notes of red fruits, caramel, and a hint of smoke. The experience is rounded out by a sweet, subtle oak finish that lingers delicately on the palate.

Double distilled NZ peated malt, aged 4 years, finished in Waiheke ‘Port Wine’ barrel.

Double distilled in February 2018 from New Zealand peated malt, this whisky was aged for 4 years in American oak. It was then finished for a year in a Waiheke Island Vintage ‘Port wine’ barrel, made from Petit Verdot grapes grown 300 metres from the distillery, gaining unique depth from the fortified wine crafted by Patrick Newton.

Crafting Waiheke's Whisky

Making whisky by the sea, our fresh water has a briny ocean influence. The combined with organic New Zealand Malted Barley, gives us our unique taste profile. If you like salinity and seaweed with sweet nuts and cigar smoke with a toffee or two, you are in the right place. Our Island is our biggest ally.

Step 01

Mashing

We start with a half ton mash of NZ malted barley and water from our aquifer

Step 02

Fermenting

We embark on a 72 hour ferment using NZ yeast in non-pressurised-washbacks

Step 03

Wash Distilation

3,000 litre batch wash distilation for approximately 8 hours with 25% ABV low wines in copper pot stills

Step 04

Spirit Distilation

Low wines and feints distilation with manual head cuts and tail cuts in copper pot stills
