Heart of Gold is our most improbable dram. Triple distilled from NZ Peated barley and aged in American Oak, this one off experimental dram was Alan Winchesters favourite drop when he visited us last.

This is a single malt with clarity, of purpose and taste. Patrick was experimenting with cuts and after a particularly unsuccessful trial, he decided to distill again. Heart of Gold was born.

Single cask, for special circumstances, the angels have taken more than their share. 150 bottle run, that's all there will ever be.

Presented with an ABV of 52%, non-chill filtered and no added colour.

Crafting Waiheke's Whisky

Making whisky by the sea, our fresh water has a briny ocean influence. The combined with organic New Zealand Malted Barley, gives us our unique taste profile. If you like salinity and seaweed with sweet nuts and cigar smoke with a toffee or two, you are in the right place. Our Island is our biggest ally.

Step 01

Mashing

We start with a half ton mash of NZ malted barley and water from our aquifer

Step 02

Fermenting

We embark on a 72 hour ferment using NZ yeast in non-pressurised-washbacks

Step 03

Wash Distilation

3,000 litre batch wash distilation for approximately 8 hours with 25% ABV low wines in copper pot stills

Step 04

Spirit Distilation

Low wines and feints distillation with manual head cuts and tail cuts in copper pot stills
