The Sweetwater

The Sweetwater was our second release, with a distillers malt offering. This non peated French oak cask finish is a delicate complex whisky showing Patricks skill as both a wine maker and a distiller. 

The Sweet Water as a term refers to the very tail end of a spirit distillation. Once the abv drops below 0.5-1% often the distiller will cut the run. At this point there is still lots of flavour but no alcohol. 

Some distillers choose to keep the last of the tails run after this cut and it's known as the sweet water. This oily sweet watery liquid with minimal alcohol content is used for cutting the aged spirit down to bottling strength and adds character and body to the liquid.
